Pierogi Pizza

Pierogi Pizza

 Ingredients:
Left over mashed potatoes
Cheddar cheese shredded
Bacon crumbles

Pizza Crust:
3 cups bread flour
1 cup warm water
1 pkg yeast (or 2 1/4 tsp)
2 tbs oil
/21 tsp salt

(I use my Kitchen Aide Mixer for this) Combine 1 1/2 cup flour, water, yeast, oil and salt on low for 30 seconds and then on high for 3 minutes with the regular mixing bar. Add remaining flour until just combined. 

Change to knead bar, lock mixer and turn on low for 6-8 minutes. 
Cover and let rise in warm place for 30 minutes.

Press crust into pie pan, pushing up around edges. Fill with mashed potatoes (I use left overs). Top with cheddar cheese, and bacon crumbles.

Place pizza in over, turn oven on to 425* and bake for 17-20 minutes or until done. Serve with sour cream.
